SOFT CHOCOLATE CHIP COOKIES
2 cups brown sugar
1 1/2 cups white sugar
2 cups all-vegetable Crisco (non-hydrogenated)
4 eggs
4 cups flour
2 tsp. baking powder
2 tsp. baking soda
2 tsp. salt
2 tsp. pure vanilla
3/4 cup chopped nuts (pecans, walnuts, etc.)
2 cups chocolate chips

Combine all dry ingredients in a large bowl and mix well.

Beat eggs until light in color. Add all ingredients except nuts and chips to bowl and mix only until combined (about 1 minute). Stir in nuts and chips.

Drop onto a parchment lined cookie sheet by tablespoonfuls and bake in a preheated 350°F oven for 10-12 minutes; remove from oven before they appear to be baked, just when the edges are slightly browned.

Cooks Note: It's important not to overbake, so keep an eye on them during the last few minutes and don't go by the timer because different size cookies bake in more or less time and your oven will affect results.

These cookies are great partially dipped in or drizzled with chocolate!

Substitution: Butter may be used to replace all or part of the Crisco, but this will cause the cookies to spread and be more crisp than soft.

Yield: About 40 large cookies

This recipe was exactly what I needed. I wanted chocolate chip cookies that were soft not crunchy, this recipe was perfect. I substituted the Crisco with butter and they turned out well. I am anxious to redo this using Crisco to see how they turn out then. Thank you!

I used self rising flour instead of plain flour, soda, salt, and baking powder. Baked all exactly 11 minutes and they were really a hit. Not crunchy but soft in the middle. Still held together great.

Mom had a class who had a sweet tooth- It was my turn to bring a dessert to Bible study.. What could I make. I types "Chocolate chip cookies" on google.com. Looked through a few of them, and finally found a good recipe on epicuria. I made the cookies. Turned out I made only 16 small cookies when I was supposed to make 30 large. They turned out horrible. Had no choice but to try it again.
Back to the internet searching "Chocolate-chip cookies"
"Hm, that one? No, no, that one." Wasting my time looking for the best recipe site. "Soft chocolate chip cookies", I read. Bingo. Cooks.com is very dependable. Made the cookies. Turned out making roughly 75 medium cookies. I got tremendous compliments, and Mom got the credit. What are you gonna do? Congrats, CM. Your recipe is on the fridge.

Wow. These are wonderful! I used light brown sugar once and dark brown the next. Light is a million times better. Not that dark wasn't good, but everyone liked the light better. Either which way they are excellent!!!
