CANDIED SWEET POTATOES OR YAMS 
A favorite Thanksgiving treat!

6 large bright orange sweet potatoes
2 teaspoons salt
1/4 cup white sugar
1 lb. dark brown sugar
1/2 cup (1 stick) butter
2 cups miniature marshmallows

Wash and peel potatoes. Chunk potatoes into 2-inch disks. Put potatoes in a pan and cover with water. Add 2 teaspoons of salt and 1/4 cup of white sugar to the potatoes and water. Cover. Boil until potatoes are fork tender (approximately 30 minutes). Drain potatoes.

Put potatoes in a baking dish and sprinkle with brown sugar. Dot potatoes with butter.

Bake for 20 minutes in 350°F oven. Sprinkle with marshmallows. Return to oven and bake until marshmallows are brown.

I made this for Christmas. Everyone loved it. I did not use as much sugar and added a little maple syrup. It was plenty sweet! Will make this again.

This is how I cook it every Thanksgiving, except I have never used sugar in the water and I don't use as much brown sugar. My kids love it! I may try the vanilla this time.

This came out very good! The only addition I used was vanilla extract. I dotted it along with the butter and added some at the bottom of the pan for extra flavoring. Came out delicious... I use this recipe every year!
