BLUEBERRY PANCAKES 
1 egg
1 1/4 cups milk
2 tbsp. vegetable oil or melted butter
1 1/4 cups sifted all-purpose flour
1 tsp. sugar
2 tsp. baking powder
1/2 tsp. salt
1/2 cup blueberries

Beat egg well. Beat in remaining ingredients in order given: milk, vegetable oil or butter, flour, sugar, baking powder and salt. Fold in 1/2 cup drained fresh or frozen blueberries.

Bake on a hot griddle.

Makes 12 (4-inch) pancakes.
