BEEF CHOW MEIN 
1 1/2 lbs. beef stew meat
2 c. celery, chopped
1 med. onion, chopped
1 sm. canned sliced water chestnuts, drained
1 sm. can sliced mushrooms, drained
1 can bean sprouts, drained
1/2 c. soy sauce
Salt & pepper to taste
2 tbsp. cornstarch, dissolved in 1/2 c. cold water

Brown stew meat, add onion, celery, salt and pepper. Cover meat with water. Cook over medium heat for about 1 hour, until meat is tender, adding water as necessary so meat does not go dry. Add water chestnuts, mushrooms, and bean sprouts, soy sauce and 3 to 4 cups water. Cook an additional 20 minutes, then bring mixture to a full boil and add cornstarch mixture to thicken. Serve over rice and chow mein noodles, adding additional soy sauce to taste.
