CRANBERRY - ORANGE RELISH 
1 1/2 c. maple syrup
2 tsp. grated orange rind
3 c. cranberries

Bring syrup and cranberries to a boil. Cover and cook for 5 minutes. Remove from heat and let stand, covered, for 5 minutes; then cook again for 5 minutes more. Remove from heat and stir in orange rind. Cool, then keep refrigerated. Yields: 2 1/2 cups.
