SEMI - DARK FRUIT CAKE | |
1 box seedless raisins, dark or white or 1/2 of each 1/2 c. shortening, Crisco, Snowdrift 1 1/2 c. sugar 1 c. cold water or 1/2 orange juice & 1/2 water 1 tsp. baking soda dissolved in the water 4 c. flour (plain not cake) 1/2 tsp. each of all spices (except ginger) 1/2# citron 1/4# lemon peel 1 c. cherries 1/4# orange peel 4 slices pineapple 1 to 2 c. nutmeats Boil raisins in 2 cups of water for 15 minutes. Stir batch so they do not turn dark. Put shortening in hot raisins, also sugar and 1 cup of flour. Work up fruits and nuts in 1 cup of flour and the spices. Sift other flour, alternately with soda water. Add 1/4 teaspoon lemon and 1 teaspoon of vanilla extract. Add fruit and nutmeats. Cover tube pan bottom with 2 sheets of brown paper, cover with wax paper and grease wax paper and sides of pan. Bake in slow oven, 250 degrees, for 2 to 3 hours. |
