BREAKFAST CASSEROLE 
About 2 lbs. any kind of apples
1 tsp. lemon juice
1/4 c. butter
2 1/2 c. corn flakes, divided
1/2 c. brown sugar
1 tsp. ground cinnamon
1/2 c. apple juice, heated

Pare and slice apples; put in a bowl. Drizzle with lemon juice and toss to coat. Melt butter in a skillet. Add corn flakes and coat with butter. Divide into 3 portions.

Spoon 1 portion of flakes into a 1 1/2-quart casserole. Spoon in half of apple slices. Mix brown sugar and cinnamon; sprinkle half over apples. Repeat layering, ending with corn flakes.

Pour hot apple juice over all. Cover casserole; bake at 350 degrees for 10 minutes. Remove cover and continue to bake for 40 minutes more. Makes 6-8 servings.

Tastes like apple pie. Great for brunches
