GRANDMA'S SWISS STEAK | |
1 1/2 lb. bottom round or rump beef, 1 1/2-2" thick 1/4 c. flour 1 tsp. salt 1/8 tsp. pepper 2 tbsp. oil 1 1/2 c. canned tomatoes 3 lg. onions, sliced 1 stalk celery, chopped 1 clove garlic, minced 3 drops Tabasco sauce Trim excess fat off meat. Combine flour, salt and pepper; with edge of saucer, pound 1/2 of it into one side of the steak. Turn steak over and pound remaining flour into other side. Heat oil in skillet and when oil is very hot, brown steak very quickly on both sides. Add rest of ingredients. Cover and bake in slow oven (300 degrees) for 2-2 1/2 hours or until tender. Uncover last 1/2 hour. Serves 5-6. |
