APPLE TART | |
PASTRY: 1 1/4 c. flour 4 tbsp. sugar 1 stick unsalted butter 2 egg yolks Pinch salt Grated lemon rind FILLING: 3 apples (Granny Smith), peeled, cored, sliced 10 oz. apricot jam Sift the flour; mix well with all pastry ingredients. Form into ball (food processor works well). Chill for 30 minutes. Roll out 1/3 of dough and cut into 10 strips. For easy handling, roll and cut on wax paper. Freeze until hard (approximately 30 minutes). Roll out rest of dough and line bottom and sides (1 inch) of 8-inch springform pan. Fill with apples and spread with jam. Arrange 10 strips lattice fashion over filling. Bake at 425 degrees for 15 minutes. Turn oven to 350 degrees; continue baking for 30 minutes more. Sprinkle with confectioners sugar when cool. Serve with whipped cream. |
