OPEN SWISS APPLE TART 
1 lg. deep baking pan, greased
Enough pastry to cover bottom and sides
Enough apples, cut in 1/8th and peeled to cover bottom of pan
Grated Hazel nuts

Enough of following ingredients to cover up to half of apples: Beaten eggs Vanilla sugar

Lemon juice

Can use any fruit that is in season - rhubarb, plums, apricots, cherries.

Cover pan with pastry and punch with fork. Cover bottom with a fine layer of Hazel nuts (ground). Place apples on top. Paint apples with lemon juice. Pour over apples, well mixed cream, eggs, and sugar. Bake in medium oven for 20 to 25 minutes until golden brown.
