“TUNA PATTIES” IS IN:

TUNA PATTIES 
1 egg
1 can chunk tuna (6 1/2 to 7 oz.)
1 tbsp. tuna liquid
1/2 tsp. prepared mustard
1/4 cup fine dry bread crumbs
Fat for frying

Combine egg, tuna, tuna liquid, mustard, and half the bread crumbs. Mix well, shape into four patties. Roll in rest of crumbs.

Heat fat for frying. Cook tuna patties over medium heat 3 to 4 minutes until browned on one side. Turn gently and cook several minutes longer until browned on other side.

You can have LOTS of fun with this. I drain the tuna and smash it first, and then add whatever white wine I might be drinking in its place. Next, I add creamy dijon instead of plain mustard. Panko bread crumbs are the best. All of this can be extremely low sodium, too! Mixed with the egg and coated with more panko bread crumbs. Let them sit for a few minutes to "gel" as it were. Once in the pan (I use olive oil and butter) they brown nicely after 3 to 4 minutes. Before I turn them, I sprinkle them with Tabasco sauce. Flip, brown, wonderful!
