PEPPER STEAK SUPREME 
2 lb. round steak, cut into strips
1/3 c. oil
1 clove garlic, crushed
1 tsp. salt
Dash of pepper
1/4 tsp. ginger
1/4 c. soy sauce
2 green peppers, cut into 1" squares
1 can bean sprouts, drain & save liquid
1 med. onion, thinly sliced
4 med. tomatoes, quartered (also canned)
1 tbsp. cornstarch
1/2 c. water

In large electric skillet, preheat at 325 degrees. Brown meat with oil, garlic, salt, pepper and ginger; stir occasionally. Reduce heat to 225 degrees. Cover and simmer for 30 minutes. Add soy sauce, green peppers, bean sprouts and onion. Cook covered, 5 minutes. Add tomatoes and cook covered about 5 minutes longer.

Blend cornstarch with water or juice from sprouts for gravy add to meat mixture, stirring gently. Cook until thickened, about 2-3 minutes. Serve over rice.
