ROUND STEAK SUPREME 
2 1/2 lb. round steak, cut 1/2" thick
1/2 c. flour
1/2 c. milk
1/2 c. Parmesan cheese
1 tsp. garlic salt
1/4 c. parsley flakes
1 c. vegetable oil
1 firm ripe tomato, sliced thin
2 eggs
1 c. saltine cracker crumbs
1/2 tsp. pepper
1 tsp. onion salt
1/2 c. water

Cut steak into 3" squares, dust with flour. Beat eggs slightly with milk in pie plate. Combine cracker crumbs, cheese, pepper, parsley and garlic and onion salts in a second pie plate. Dip meat into egg mixture, then into crumb mixture to coat evenly. Brown pieces slowly, a few at a time, in oil in a large frying pan; place in large flat baking pan. Top each piece of meat with thin slice of tomato. Stir water into frying pan, heat to boiling. Pour over meat; cover, bake in slow oven, 300 degrees, for 1 1/2 hours.
