SQUASH CASSEROLE 
1 - 1 1/2 lb. squash
1 med. onion, grated
1 carrot, grated
1 can cream of chicken soup
1/2 pt. sour cream OR Velveeta cheese
1 stick butter, melted
1 bag her Peppridge Farm stuffing mix

Cook squash until tender, then mash. Add the next 5 ingredients to the drained mashed squash. Mix in a separate bowl, the melted butter and stuffing mix. Mix 1/2 the butter-stuffing mixture into the squash mixture. Place into a baking dish. Pour the remaining butter- stuffing mixture on top. Bake at 350 degrees for 30 minutes.
