QUICK CHICKEN AND RICE 
2 lbs. chicken parts
1 (10 oz.) can chicken broth
3 cloves minced garlic
2/3 c. rice (uncooked)
1 (8 oz.) can tomatoes, drained and chopped
1 c. chopped green pepper
2 tbsp. chopped pimento (optional)
1/4 tsp. hot pepper sauce (optional)

In skillet in hot oil, cook chicken parts 10 minutes or until browned. Spoon off fat. Add chicken broth, garlic, rice, tomatoes, green pepper, pimento and hot pepper sauce. Cover; simmer 30 minutes or until chicken is fork tender and liquid is absorbed. Makes 4 servings.
