QUICK WILD RICE CHICKEN
CASSEROLE
 
6 oz. pkg. UNCLE BEN'S® long grain & wild rice
1/4 c. chopped onion
1/4 c. flour
1/2 tsp. salt
Pepper
1 c. milk
1 c. chicken broth
1/4 c. chopped parsley
2 c. cubed chicken
3 tbsp. slivered almonds
2 tbsp. butter

Cook rice according to package directions. Saute 1/4 cup chopped onion in butter. Blend in flour, salt and pepper. Stir in milk and chicken broth. Stir constantly. Cook until thickened. Allow mix to boil 1 minute.

Combine sauce with rice mixture, parsley, chicken and almonds. Pour into 2 quart baking dish. Bake 30 minutes at 425 degrees.
