CLARE'S BAKED CHICKEN SALAD 
2 - 4 c. (2 breasts) cooked chicken pieces
8 oz. can water chestnuts
2 diced pimiento or fresh red pepper
1/2 c. toasted slivered almonds
1/2 c. sliced mushrooms
2 tbsp. lemon juice
1 c. mayonnaise
Salt and pepper

Mix all ingredients and place in ungreased baking dish. Shred 4 ounces cheddar cheese over the top, then 1 can of French fried onions. Bake at 350 degrees for 30 to 40 minutes.
