ENCHILADAS 
1 doz. flour tortillas
1 c. oil for frying
1 can enchilada sauce
1 lb. hamburger
1 onion, chopped
1 clove garlic, chopped
1 lb. cheese; 1/2 Cheddar & 1/2 Jack
Salt & pepper to taste
1 can olives
1/2 tsp. oregano
1/2 tsp. cumin

Fry hamburger with onion and garlic. Add 1/2 teaspoon oregano and cumin to meat, remove from pan. Add sauce to hamburger drippings and heat. Grate cheese and set aside. Chop olives and set aside.

Heat oil in another pan. Start assembling; take a tortilla put through heated oil, let drain, then put in sauce, next on cookie sheet. Fill with hamburger, cheese and a few olives; roll up and put at the end of cookie sheet. When you finish all tortillas, sprinkle cheese on top of the enchiladas along with a few olives. Put in a preheated 350 degree oven for 15 minutes or until cheese melts and inside gets hot. Enjoy!
