COTTAGE BREAD 
1 pkg. dry yeast
1 1/4 c. warm water
1 1/2 tbsp. sugar
1 1/4 tsp. salt
1 tbsp. soft shortening
4 c. all-purpose flour

Dissolve yeast in 1/4 cup warm water. Combine sugar, salt, shortening, yeast mixture and remaining warm water in large bowl; add 2 cups flour; beat until smooth. Add 1 3/4 cups flour and stir until dough cleans side of bowl. Turn onto floured board and knead until smooth. Place dough in greased bowl, cover and let rise in warm place for 45-60 minutes. Turn onto floured board. Shape into a loaf. Place in greased loaf pan and cover. Let rise for 30-45 minutes. Make 5 inch slashes, 1/4 inch deep on top of loaf. Sift remaining flour over top. Bake at 400 degrees for 35-40 minutes. Let cool on rack.
