FRUIT PIZZA
1 1/2 c. flour
1/4 c. sugar
1/4 c. butter
1/4 c. vegetable oil
3 tbsp. cold water
Vegetable cooking spray

FILLING:

6 oz. cream cheese
1/4 c. sugar
1/2 tsp. vanilla
1 1/2 c. strawberries (sliced thin)
3 kiwi, peeled and sliced
1/2 c. blueberries
1 c. sliced peaches
1/2 c. halved grapes

GLAZE:

1 tsp. cornstarch
1 tbsp. water
1/4 c. orange juice
3 tbsp. powdered sugar

Preheat oven to 375 degrees. Combine flour and sugar. Cut in butter to make coarse meal. Stir in oil with fork until moistened. Stir in water 1 tablespoon at a time until dough leaves side of bowl and forms a ball.

Shape dough into a ball directly on baking sheet. With lightly floured rolling pin, roll pastry into 11 inch circle. Bake until light browned, 12-14 minutes. Cool completely.

Beat cream cheese, sugar and vanilla until smooth. Spread on crust. Arrange fruit attractively over pizza.

Glaze: Cook all ingredients over medium heat until boiling, stir constantly. Cook and stir for 1 minute longer. Cool. Spoon over pizza.

Note: You may substitute your favorite fruits.
