SPINACH CORNBREAD 
4 eggs (I use 3)
1 (8 oz.) pkg. corn bread mix
4 oz. pkg. cottage cheese
1/2 tsp. salt
1 sm. onion, chopped
1 stick butter, melted
1 (10 oz.) pkg. frozen spinach, chopped, cooked & drained

Melt butter in 8 x 8 inch baking dish. Mix the rest of the ingredients in bowl and pour into the baking dish with butter. Bake for 40 to 45 minutes at 350 degrees.
