CRABMEAT BROCCOLI CASSEROLE 
12 slices bread
2 1/2 c. milk
1 c. mayonnaise
7 hard cooked eggs, finely chopped
1 lb. fresh crabmeat
1/4 c. chopped onion
1 tbsp. and 1 tsp. minced fresh parsley
2 (10 oz.) pkg. frozen broccoli
1 c. (4 oz.) shredded sharp Cheddar cheese

Remove crust from bread, reserving crust for use in other recipes. Cut bread into 1/2 inch cubes. Combine bread cubes, milk, and mayonnaise; stir well. Cover and refrigerate 30 minutes. Remove mixture from refrigerator and stir in eggs, crabmeat, onion, and parsley. Cook broccoli according to package, drain and arrange broccoli in lightly greased 13 x 9 x 2 inch dish. Spoon crabmeat mixture evenly over broccoli and bake uncovered at 325 degrees for 40 minutes. Sprinkle with cheese and bake additional 5 minutes.
