POTATO PANCAKES (KARTOFLANE
PLACKI)
 
3 c. grated potatoes (raw)
2 eggs, well beaten
2 tbsp. flour
1 tsp. sugar
1 tsp. salt

Squeeze potatoes to get off as much water as possible. Mix all ingredients together and beat well. Drop mixture by heaping tablespoons on well greased hot griddle or pan and spread thinly. Fry both sides until a golden brown. Add more shortening as needed.
