PINEAPPLE UPSIDE DOWN CAKE 
12 pineapple slices
1 Duncan Hines yellow cake mix
3 eggs
1 1/4 c. pineapple juice and water
1/3 c. oil
10 pecan halves
1 (1/4 stick) butter
1 (1 lb.) box light brown sugar
18 maraschino cherries

Drain 1 number 2 can of pineapple slices plus 2 additional slices. Melt butter in sheet cake pan while oven is preheating to 350 degrees. Add light brown sugar to butter and spread evenly on bottom of pan. Add pineapple slices, cherries in the holes and centers. Pecan halves in the outside triangles.

Mix cake mix according to box directions using as much pineapple juice as you can in place of water. Bake approximately 50 minutes or until a toothpick comes out clean.
