POTATO AND BROCCOLI 
4 baking potatoes, scrubbed and thinly sliced
1/4 c. butter
1/4 tsp. paprika
1 (10 oz.) pkg. frozen broccoli spears, thawed
1 1/2 c. shredded Cheddar cheese
1 tsp. salt
1/8 tsp. pepper

Place unpeeled sliced potatoes in a 9 x 13 inch baking pan. Combine melted butter and seasonings and drizzle over potatoes. Bake uncovered at 425 degrees for about 40 minutes, until potatoes are tender, top with thawed broccoli spears and cheese. Return to oven for 5 to 10 minutes more, until broccoli is heated through and cheese is hot and bubbly.
