MEXICAN OVEN-FRIED CHICKEN | |
1 (3 lb.) fryer, cut into serving size pieces & skinned 1 1/2 c. Bloody Mary mix 1/2 c. crushed corn flakes cereal 1/2 tsp. dried whole oregano 1/2 tsp. ground cumin 1/2 tsp. chili powder 1/2 tsp. paprika 1/4 tsp. onion salt 1/8 tsp. garlic powder Vegetable cooking spray Combine chicken and Bloody Mary mix in a large bowl; cover chicken and refrigerate 6 hours or overnight. Combine next 7 ingredients. Drain chicken and dredge in cereal mixture. Arrange chicken pieces in a jelly roll pan coated with cooking spray. Bake at 350 degrees for 50 to 60 minutes or until done. Yield: 6 servings (about 178 calories serving). |
