BEEF NOODLE SOUP 
3 lbs. beef neck bones or short ribs
1 lg. onion, diced
6 c. water, more as needed
2 stalks celery, diced
1 tsp. salt
1 pkg. medium wide noodles or homemade noodles

Cook bones or short ribs in salted water with onion and celery until meat is tender. Remove bones. Return meat to stock. Add noodles and cook until tender, about 30 minutes. Serve hot. Serves 4-6.
