LUSCIOUS LEMON DROPS 
1 pkg. lemon-flavor cake mix
1 (4 1/2 oz.) container frozen non-dairy whipped topping, thawed
1 egg, beaten
1 1/2 tsp. lemon juice
1 tsp. grated lemon peel
1/2 c. confectioners sugar, sifted

In a large mixing bowl, combine dry cake mix, whipped topping, egg, lemon juice and lemon peel; stir to mix well. Drop dough by teaspoonfuls into confectioners sugar, turning to coat well. Place balls 1 1/2 inches apart on well-greased baking sheets. Bake in a preheated 350 degree oven 12 minutes or until done. Remove from baking sheets immediately and let cool on wire racks. Makes 4 dozen.
