CHOCOLATE ZUCCHINI BREAD | |
3 c. all-purpose flour, sifted 2 c. sugar 1/4 tsp. baking powder 1 tsp. baking soda 1/2 tsp. salt 1 tsp. cinnamon 1/4 c. unsweetened cocoa 3 eggs, beaten 1 c. oil 1 tsp. vanilla 1 c. pecans, chopped 2 c. zucchini, grated Sift dry ingredients together in a large bowl. In a medium bowl, combine eggs, zucchini, oil, vanilla and pecans. Stir zucchini mixture into flour mixture. Spread in two well greased and floured 9 x 5 x 3 inch loaf pans. Bake in a preheated 325 degree oven for about 1 hour. |
