CHOCOLATE ZUCCHINI BREAD 
3 eggs
2 oz. unsweetened chocolate, melted and cooled
1 tsp. vanilla
3 c. flour
1 tsp. baking powder
1 tbsp. cinnamon
1 3/4 c. sugar
2 c. finely chopped zucchini
1 tsp. salt
1 tsp. baking soda
1 c. chopped nuts

Grease 2 loaf pans. Beat eggs until thick and lemon colored, then add sugar and oil. Stir in chocolate, vanilla and zucchini. If zucchini is frozen, drain and add to batter. Combine dry ingredients and add to mixture; stir together. Bake at 350 degrees for 50 to 60 minutes. Cool 15 minutes.
