DEEP DISH PEACH PIE 
6 or 7 lg. peaches, peeled & halved
Sugar to taste
1 1/2 c. sifted cake flour
2 tbsp. sugar
1 1/2 tsp. baking powder
1/2 tsp. salt
4 tbsp. butter
1/2 c. milk

Place peaches in casserole; sprinkle with sugar to taste. Cut butter into mixed and sifted dry ingredients to the consistency of corn meal. Add milk and mix until just blended. Turn onto floured board. Fold over three times. Pat to size of casserole. Place on fruit. Bake in moderate oven at 375 degrees for one hour or until pastry is done. Makes 4 servings.
