ENCHILADA PLATTER CASSEROLE 
1 lb. ground beef
1 1/2 tbsp. chili powder
1 tsp. onion powder
15-20 corn tortillas
1 (6 oz.) can tomato paste
Salt and pepper to taste
1 1/2 lb. grated Cheddar cheese
Onions, optional

Brown beef in large cooking pot. Add seasoning, tomato paste, and 3 (6 ounce) cans water. Let simmer about 45 minutes.

Dip tortillas into sauce. Place on separate plate to be used later. Place tortillas in greased 9 x 11 baking pan side by side until bottom of pan is covered. Add sauce and cheese in the same way. Continue layers almost to the top of pan.
