GARDEN TACO RICE 
1 lb. ground beef or turkey
1/2 c. chopped onion
1 pkg. taco seasoning mix (1 1/4 oz.)
1 1/2 c. water
1 1/2 c. thinly sliced zucchini
1 c. Green Giant niblets frozen corn
1 can stewed tomatoes (14 1/2 oz.)
1 1/2 c. uncooked instant rice
1 c. shredded cheddar cheese (4 oz.)

In large skillet, brown meat and onion; drain. Stir in remaining ingredients except rice and cheese. Bring to a boil. Stir in rice. Reduce heat to low, cover, and simmer 5 to 7 minutes or until liquid is absorbed, stirring occasionally. Remove from heat. Fluff mixture with fork and sprinkle with cheese. Cover and let stand 3 minutes or until cheese is melted.
