LAZY - DAY STEW | |
2 lb. beef cubes 4 med. potatoes, cut in big chunks 4 sm. onions, cut up 4 stalks celery, cut up 1 can (8 oz.) tomato sauce 1 c. water 1 tsp. sugar Salt & pepper to taste 2 tsp. minute tapioca Arrange beef cubes in a single layer in a 9 x 134 inch pan with plenty of room. Do not brown the meat first. Add cut vegetables. Mix tomato sauce, water and sugar; pour over mixture. Season to taste. Scatter 2 teaspoons tapioca (no more) over the top. Do not stir. Seal the pan tightly with foil, 2 sheets of regular or 1 sheet of heavy duty. Bake at 325 degrees for 2 hours. 3 isn't too long. Don't peek during cooking time. Serves 6-8. |
