ZUCCHINI CASSEROLE 
4 med. zucchini, sliced (1/2 to 3/4 inch)
1 tbsp. butter, butter, or Pam olive oil flavor
2 cans stewed tomatoes
16 oz. cheese (more than one kind adds flavor), may be shredded or sliced brick
1 sm. onion (optional)

(Preferably with pepper and onions - cut up into small pieces, save 1/2 can juice).

Melt butter (or spray Pam) in 16 inch frying pan. Place zucchini and onion in pan. Cover and cook cover medium heat, stir occasionally. When soft add stewed tomatoes and juice. Simmer over low heat 15 minutes. Sprinkle cheese over mixture, cover and simmer over medium heat until cheese is melted. Serve warm as main course or side dish.
