CORNED BEEF AND CABBAGE -
MICROWAVE
 
3 lb. corned beef
Water (to cover)
1 lg. head cabbage, cut into 8 wedges

Place corned beef in glass casserole. Add water to cover. Cover with plastic wrap. Cook on high microwave setting (9) for 2 hours or until cooked beef is tender. Remove meat from liquid. Add cabbage. Cook on high (9) for 10 to 12 minutes. Sliced corned beef and serve with cabbage.

NOTE: Total cooking time approximately 2 hours, 10 minutes. Serves 6 to 8. Use 3-quart glass casserole dish.

Since microwave ovens vary in power, you may need to adjust your cooking time.
