SWEET POTATO SOUFFLE 
6 or 7 sweet potatoes, cook, skin, mix like mashed potatoes
1 sm. can sweet milk
2 eggs, beaten
1 tsp. vanilla
1 c. sugar
1/2 tsp. salt
1/3 c. melted butter
1/3 c. self-rising flour

Mix until creamy and put in buttered baking dish. Bake at 350 degrees for 30 minutes until done.

TOPPING:

1 c. brown sugar
1/2 c. butter
Chopped nuts

Melt and pour over top of baked potatoes.
