CRABMEAT AU GRATIN 
1 lb. crabmeat (white)
1/4 c. butter
2 tbsp. chopped onions
1/4 c. flour
1/2 c. milk
1 c. light cream
1 tsp. salt
1 egg yolk
1 can mushroom, drained
1 c. grated cheddar cheese

Melt butter in medium saucepan, saute onion 5 minutes. Remove from heat, stir in flour. Gradually stir in milk and cream, bring to boil, stirring, reduce heat and simmer until thick, 8 or 10 minutes. Remove from heat, stir in salt. Stir a little of the mixture into egg yolk, return to rest of sauce and stir in crabmeat which has been picked through for shells, mix and stir in mushroom. Sprinkle cheese on top. Bake in greased 1 quart casserole at 350 degrees for 20 minutes.
