CRABMEAT AU GRATIN | |
1/2 c. butter 1 c. finely chopped onion 1/4 c. flour 1 (13 oz.) can evaporated milk 2 egg yolks, beaten 2 tsp. creole seasoning 1 lb. fresh crabmeat 1 c. bread crumbs 2 c. grated cheddar cheese Paprika Pick crabmeat to remove any shell fragments. In large skillet, melt butter. Add onion and saute until translucent. Add flour, stirring constantly, then add milk. Add beaten egg yolk, stirring constantly. Add creole seasoning and stir. Remove from heat and carefully add crabmeat and bread crumbs. Mix well. Pour into 8 x 10 inch ovenproof dish. Cook for 15 minutes at 375 degrees. Sprinkle cheese on top then sprinkle paprika on top of cheese. Return to oven for 15 minutes. Serves 6. |
