CRABMEAT AU GRATIN 
1 lb. crabmeat
1 sm. can evaporated milk
1 sm. onion
1 sm. bell pepper
1 celery stalk, chopped
1 stick butter
1/4 c. flour
1 c. Velveeta cheese
4 slices American cheese

Saute onion, celery and bell pepper in butter until tender. Add Velveeta cheese and flour. Slowly add milk until thickened and well blended on medium heat. Add crabmeat and cook 10 minutes. Pour into casserole. Top with American cheese slices. Bake at 375 degrees for 10 to 15 minutes or until lightly browned.
