CRABMEAT AU GRATIN 
1 stalk celery, cut fine
1 c. onion, cut fine
1/4 lb. butter
1/2 c. all-purpose flour
1 (13 oz.) can evaporated milk
2 egg yolks
1/2 tsp. salt
1/2 tsp. red pepper
1/4 tsp. black pepper
1 lb. white crabmeat
1/2 lb. grated Cheddar cheese

In large skillet melt butter and saute onions and celery until wilted. Blend in flour and pour milk gradually, stirring constantly. Add egg yolks, salt, red and black pepper. Cook for 5 minutes. Pour the cooked sauce on the crabmeat in a mixing bowl, blending well. Add all the ingredients. Transfer into a lightly greased casserole and sprinkle with grated cheese. Bake at 375 degrees for 15 minutes. Serves 6.
