CINNAMON FROSTED ZUCCHINI CAKE | |
1 3/4 c. flour 1 1/2 tsp. baking powder 3/4 c. butter 1/2 c. packed brown sugar 1 tsp. vanilla 1 c. coconut (opt.) 3/4 c. nuts (opt.) 1/2 c. sugar 2 eggs 2 c. shredded zucchini 2 c. powdered sugar 2 tbsp. milk 2 tbsp. melted butter 1 tsp. ground cinnamon 1 tsp. vanilla Grease 15"x10"x1" baking pan. In small bowl, mix flour and baking powder. Set aside. Beat butter with mixer in large bowl on medium speed for 30 seconds. Add sugars and beat until fluffy. Add eggs and vanilla and beat well. Stir in flour mixture. Stir in zucchini, coconut and nuts. Spread evenly in pan. Bake at 350 degrees about 30 minutes or until done. Cool completely in pan on wire rack. Frost. For frosting, beat powdered sugar, milk, melted butter, cinnamon and vanilla in a large bowl. Beat until smooth. Cut into bars. |
