STRAWBERRY PANCAKES 
1 1/4 c. flour
2 tbsp. sugar
2 tsp. baking powder
3/4 tsp. salt
1 1/3 c. milk
1 egg slightly beaten
Salad oil
1 c. fresh or frozen (thawed) strawberries

In large bowl, mix flour, sugar, baking powder and salt. Add milk, egg and 3 tablespoons salad oil and stir just until flour is moistened. (For thicker pancakes use just 1 cup of milk).

Heat griddle over medium heat until a drop of water sizzles; brush lightly with salad oil. Pour by scant 1/4 cupfuls onto hot griddle. Cook until tops are bubbly and bubbles burst. Turn over and cook until undersides are golden brown. Serve warm. Before cooking add strawberries to mix.
