SWEET POTATO CASSEROLE 
1 lg. can sweet potatoes, mashed
2 eggs, well beaten
2 tsp. cornstarch
1/2 c. butter
1 1/2 c. sugar
1 c. milk

Dissolve cornstarch in a little of the milk, mix all together and place in casserole dish, bake for 15 to 20 minutes at 400 degrees.

TOPPING:

1 c. crushed cornflakes
1/2 c. brown sugar
1 c. coconut
1/2 c. chopped nuts
3/4 c. butter

Mix all together over low heat. Spread over sweet potato mixture, return to oven for another 15 to 20 minutes.
