GALLOPING MUSHROOM SOUP 
Olive oil
3 cloves garlic
1 lg. onion, sliced
Favorite herbs
1 lb. mushrooms, sliced
3 c. chicken broth
3 tsp. tomato paste
2 to 3 oz. sweet vermouth
Seasoned bread crumbs
Grated Asiago, Parmesan or Romano to taste

Add amount of oil as needed to pan. Add garlic and sliced onion and fry on medium heat to soften onion. Add whatever herbs you choose, mushrooms and chicken broth, tomato paste and vermouth. Bring to a boil, reduce to low heat and cook for about an hour or longer.

Add bread crumbs and cheese.
