GARLIC - DILL DRESSING 
1/2 lb. fresh tofu, drained & sliced
3 tbsp. lemon juice
2 tbsp. oil
1 tsp. garlic salt
1/4 tsp. dill seed or 1/8 tsp. anise seed

Drop tofu into boiling salted water; leave about 2 minutes, drain. Whiz all ingredients in blender. Add a spoonful of water if necessary to operate blender. Toss with salad, use over cooked vegetables, such as broccoli and greens; use as a spread for sandwiches in place of mayonnaise.

Note: This is a basic recipe. The mild flavor of tofu is best accompanied by definite seasonings. Blanching of tofu is not necessary for the success of this recipe.

Variations: 1) Use dill weed for milder flavor or use favorite herb in place of dill. 2) Replace garlic salt with onion salt or celery salt. 3) For refreshing green color and added flavor, add about 1/4 cup chopped parsley. 4) Replace garlic salt with 2/3 teaspoon salt and 1/2 clove garlic.
