RICE CUSTARD 
1 c. rice
3/4 c. sugar
1/2 tsp. nutmeg
4 eggs
2 c. milk
1 tsp. vanilla
Peel of 1/4 orange, diced

Boil rice until soft. Drain. Combine rice with milk and bring to a boil. Add orange peel. Beat eggs and sugar together until very light and add to boiling custard. Cook for 1 minute. Remove from heat, add vanilla and 1/4 teaspoon nutmeg. Place in dishes to chill. Sprinkle with rest of nutmeg. Serve cold. Makes 8 cups. Black or white raisins or mixed nuts may be added for variety.
