PEANUT BUTTER CRUNCHIES 
A Crisp Cookie.

1/2 cup shortening (Crisco)
1/2 cup peanut butter
1/2 cup packed brown sugar
1/2 cup granulated sugar
1/2 tsp. vanilla
1 egg
1 1/2 cups sifted all-purpose flour
1 tsp. baking soda
1 tsp. salt

Preheat oven to 375°F.

Combine shortening and peanut butter. Add sugars and vanilla and mix until fluffy. Add egg and beat well.

Sift together dry ingredients and blend into sugar mixture. Shape into small balls.

Place on a cookie sheet 2-inches apart. Flatten with tines of fork dipped in sugar.

Bake at 375°F for about 10 minutes.

Makes 4 to 5 dozen small cookies.
