GERMAN POTATO SALAD | |
5 lg. baking potatoes 5 slices bacon, cooked and crumbled 1/4 c. green pepper, chopped 1/2 c. onion, chopped 1 tbsp. chopped parsley 1 c. sugar 3/4 c. cider vinegar Conventionally bake or microwave potatoes. Chill potatoes for best slicing results. Peel and slice potatoes. Set aside. In a skillet fry bacon; remove from pan, reserving grease. Add pepper, onion and parsley to skillet. Saute in bacon grease until tender. Add sugar and vinegar; bring to a boil. Cook, stirring until sugar is dissolved. Pour mixture over potatoes. Add crumbled bacon and toss until flavors are blended. Serves 4-6. |
