1 pkg. Gruyere cheese 2 pkg. Cracker Barrel sharp Cheddar cheese 1 lg. pkg. Philadelphia cream cheese 2 c. walnuts, pecans or almonds, chopped Garlic & onion juice & Tabasco to taste Let Philadelphia cream cheese soften in mixing bowl while grating or grinding other cheeses. Work all cheeses together with cream cheese. Season with garlic, onion, and Tabasco. Use 1 cup of nuts in mixing, saving the other half for decorating. Roll into log shape, then roll in nuts; perhaps a few sprigs of parsley chopped fine. Stick a child's miniature hatchet in it and put on a bed of parsley. Variation: I sometimes shape this cheese into a Christmas tree by starting with a large circle of cheese on a plate and making some circles of cheese only smaller, until it forms a cone. This is made to look like a tree by mashing a wooden spoon into the edges to form branches, on which I put sprigs of parsley, and decorate the whole thing with walnut halves, pimentos and olives for tree ornaments. |
